Hunting the Great Oregon Truffle
In late November, I traipsed through Tolkien-like terrain with two Portland chefs. We were on a truffle hunt, seeking the Oregon white (Tuber oregonense) deep in a grove of Douglas fir trees, just a short ride away from the Joel Palmer House in Dayton, Oregon. Did we dig up culinary gold that day? Read the latest issue of Portrait of Portland to find out. Also in the issue, find a collection of decadent truffle-inspired recipes, including Angel Hair Pasta with Maine Lobster Truffle Sauce from chef Christopher Czarnecki and Oeufs Brouilles a la Truffe from chef Vitaly Paley.
